One of our favorite restaurants in Las Vegas resides at Palms Place, Nove Italiano. We have been there quite a few times and each time was as good as the last. If you are curious to see the Playboy Club, diners are allowed up the back way. It's worth a look, as the view is a great shot of the strip. The Palms is owned by the Maloof brothers so it caters to the young, hip beautiful people of Las Vegas. The Palms Spa rates are much lower than some of the others in Las Vegas and offers a wide range of spa services. It’s not really walking distance to the strip, so be prepared to pay for a cab or a good hike to get there.

Red Rock Casino Resort Spa

The Red Rock Casino Resort is also located in Summerlin. The hotel has a free daily shuttle that drops off at the Fashion Mall, which is right across from Wynn/Encore and the Palazzo/Venetian. The hotel is very contemporary and has a great feel to it! If you are traveling with children there is a full blown children's program, as well as a huge bowling alley, video arcade and movie theaters (most movie theaters are in hotels in Vegas). You can even rent a private bowling area or a cabana by one of the numerous pools (we felt like we had our own pool the day we were there). The spa is comfortable and opens up to a private pool for spa patrons and cabana area as well. Most suites are a spacious 525 square feet. The lobby bar is quite a site and the contemporary boutique-feel of the hotel give this hotel consistently high ratings in our book.

Spa Cuisine Recipe of the Week

Mediterranean Chicken and Portobello Couscous

The Spa at Camelback Inn
Servings: 1

ingredients
- 4 oz chicken breast
- 1 tbsp. of diced Portobello mushroom
- ½ tsp. garlic
- ½ tsp shallot
- 1 tsp. mixed diced peppers
- 1 tbsp. red pepper coulis
- 1 to 2 tsp. lemon juice
- 1 to 2 tbsp. chicken stock
- 1 to 2 tbsp shaved fennel for extra flavor and texture
- ½ to ¾ cup Israeli couscous (Precooked with mushroom, shallot, peppers and garlic)

Method of Preparation

Start with a lemon and oregano marinated chicken roast until done.
Pull the meat from the bone and separate most of the meat.
Start off with a hot saute pan. Coat the pan with olive oil and add 1/2 of mushrooms, all of the chicken, 1/2 shallot along with 1/2 of the garlic. Bring up to heat and hit with lemon juice and half of your chicken stock season with s+p and finish with fennel.
In a separate hot saute pan, start your remaining mushrooms, peppers, shallot and garlic with couscous. Heat through and hit with red pepper coulis. Add the rest of chicken stock. Bring to temp. Adjust seasoning.
Stripe your plate with coulis and make a bed with the couscous and lay the chicken over the top. Garnish with fennel and sauteed mushroom.

You can use any good-quality white or green fresh pasta sheets for this vegetable-rich cannelloni. Look for the thinnest sheets possible and trim them to size with a sharp knife.

ingredients
- 3 large carrots, cut into 1-inch pieces
- 3/4 pound butternut squash, peeled and cut into 1-inch dice (2 cups)
- 4 garlic cloves
- 1 teaspoon thyme leaves
- 2 tablespoons extra-virgin olive oil
- Salt and freshly ground pepper
- 6 tablespoons freshly grated Parmesan cheese (1 1/2 ounces)
- Pinch of freshly grated nutmeg
- 1/2 pound chanterelle mushrooms, thickly sliced if large
- One 3/4-pound bunch of Swiss chard, leaves only, coarsely chopped
- 1 cup chicken stock or canned low-sodium broth
- 1 tablespoon unsalted butter
- 24 small sage leaves
- Eight 4-inch-square store-bought fresh pasta sheets (4 ounces)

Preheat the oven to 400°. On a large, rimmed nonstick baking sheet, toss the carrots and squash with the garlic, thyme and 1 tablespoon of the olive oil. Season with salt and pepper. Roast the vegetables for about 20 minutes, tossing once or twice, until golden and tender. Turn the oven down to 350°.
Transfer the garlic cloves to a small bowl and mash them with the back of a fork. Scrape the remaining vegetables into a medium bowl and coarsely mash them. Stir 1/4 cup of the Parmesan cheese and the nutmeg into the mashed vegetables. Season with salt and pepper.
In a large skillet, heat the remaining 1 tablespoon of oil until shimmering. Add the mushrooms, season with salt and pepper and cook over moderately high heat, stirring frequently, until softened, about 5 minutes. Add the Swiss chard and chicken stock and cook, stirring frequently, until the greens are tender and the liquid in the pan has reduced to a few tablespoons, about 10 minutes. Stir in the mashed garlic and season with salt and pepper. Keep warm.
Melt the butter in a small skillet. Add half of the sage leaves and cook over moderately high heat, stirring, until crisp, about 2 minutes. Drain on paper towels and sprinkle with salt. Repeat with the remaining sage leaves.
Bring a medium saucepan of salted water to a boil. Add the pasta sheets and cook until tender, about 4 minutes. Drain and shake off any excess water. Lay each sheet on a work surface and pat dry. Spoon 2 1/2 tablespoons of the mashed carrots and squash into the center of each pasta sheet. Roll the pasta around the filling to form logs. Place the cannelloni, seam side down, in a small baking dish. Brush lightly with water and sprinkle with the remaining 2 tablespoons of Parmesan cheese.
Bake the cannelloni for about 5 minutes, or until golden and heated through. Spoon the chanterelles and chard in the center of large plates and top with the cannelloni. Garnish with the crisp sage leaves and serve.

MAKE AHEAD: The recipe can be prepared through Step 3 and refrigerated overnight.

Organic Garden Herb Salad (Vegetarian)

- 1 head organic lollo rosso
- 1 head organic radiccio
- 1 head organic frisee
- 1 head organic lettuce
- 10 organic missuna leaves
- 2 sprig organic basil, crushed
- 2 sprig organic mint, crushed
- 4 sprig organic chives, crushed
- 80 g organic carrots, diced
- 60g organic shallots, sliced
- Dressing
- 6 tsp lime juice
- Salt and pepper to taste
- 100ml olive oil

Separate the salad leaves from their head and trim their spines. Wash and dry the leaves Tear them into bite sized pieces. Combine them with the basil, mint, chives, carrots and shallots in a large serving bowl and toss well. Combine the lime juice, salt, pepper and olive oil in a blender and process into a smooth emulsion. Drizzle the dressing over the salad and toss well.

Spa Cuisine Recipe of the Week

Golden Tomato Vinaigrette

Yield: 1 cup
1 tsp.+ 2 Tbsp.
1 each
1/4 cup
1 med.
1 large
1 tsp.
1/4 tsp.
Pinch

Extra virgin olive oil
Shallot, diced
White wine
Lemon; zest and juice
Golden tomato, cored and seeded
Dijon mustard
Sea salt
Freshly ground black pepper

Heat 1 tsp. of the olive oil in a small saucepan over medium heat. Add shallot and sauté until translucent. Add white wine and lemon zest and reduce by half; transfer to a blender.
Add tomato, mustard, and lemon juice to the blender and puree. With the motor running, add the remaining oil in a stream. Season with salt and pepper. Adjust consistency with a few drops of water if vinaigrette is too thick.

Sandi here again with Spa Secret #4 of Sandi's "10 Tips to Avoid a Spa Vacation Nightmare." and it's a doosie! Enjoy!

You were so excited to finally get to the spa, that you just threw your suitcases into the room, jumped into your bathing suits and flip flops and headed right to the pool. Oh, the feeling of that pool is going to be great after that long flight and the hamburgers you have been hearing about are calling your name. You can smell the BBQ waft your way, as you open the doors to the pool area. You turn the corner and no one is wearing clothes! Surprise!

Don't be afraid to ask questions that you might have ahead of time. Many people avoid spas because they're not sure what to ask or what might be asked of them. Remember, this is YOUR spa vacation, so you deserve to get the experience that you want.

Is there something in the spa that you find is necessary? Do you want a Jacuzzi tub? Do you care if it is co-ed or not? Do the majority of the guests wear a bathing suit?
